White Whole Wheat Flour


When I say "white whole wheat flour" in my recipes, I'm not referring to the white flour/whole wheat flour blends.... King Arthur Flour produces a 100% whole wheat flour that they call "white whole wheat" because it's lighter in taste and texture than regular whole wheat flour. I highly recommend it--you can find it in most bigger grocery stores (and for cheaper than their website). We use it in muffins, breads, even cookies!

I buy hard white wheat and I grind my own flour with an attachment to my KitchenAid stand mixer. Do you think this is the same as "white whole wheat flour?" It is definitely lighter than the regular hard red wheat (which is why I use it) but it is still whole wheat and different than white flour. What do you think?

Hmmm... I bet the flours are the same or very similar--the white whole wheat of King Arthur's is supposedly from a lighter tasting wheat than what is typically used for "whole wheat flour." My friends who grind their own wheat make similar tasting bread to what the white whole wheat makes. We dream of grinding our own wheat! Someday!
