February 2-week menu (2011)

Our schedule has changed yet again with the start of a new semester. I'm "only" taking 1 master's class this semester (Monday night), but it's going to rock my world with the amount of reading/writing required. In addition to that, the kids are taking swim lessons on Mondays and Wednesdays from 5:00-5:30. You'll see those realities reflected in our dinner plans for this coming month!

Week 1
Sunday: Fancy Chicken, rice, Speedy Rosemary Green Beans (b'day dinner for hubby; won't be repeated); leftovers or omelets for dinner
Monday: Crock Ham and Beans, cornbread, fresh veggies and dip
Tuesday: Pork roast, sweet potatoes, Spinach Maria
Wednesday: Overnight Waffles, Bacon, oranges
Thursday: Freezer meal; Fruit salad
Friday: Pizza
Saturday: Soup and French Bread

Week 2
Sunday: TBA
Monday: Crock French Dip Sandwiches, fresh veggies/dip
Tuesday: Roast chicken, potatoes, green beans, fruit
Wednesday: Crock pot meal!
Thursday: Stir-Fry
Friday: Fish, peas, rice pilaf
Saturday: Nachos

Breakfast Rotation: (this really does help!)
Sunday: hard-boiled eggs, muffins (from the freezer), bananas
Monday: cold cereal and bananas
Tuesday: muffins (double batch--some for freezer for Sunday!), protein (cheese, yogurt, eggs, ?), fruit
Wednesday: some sort of hot breakfast (eggs and toast or something)
Thursday: Oatmeal
Friday: Pancakes
Saturday: whatever

Lunch Ideas: (also something that helps when you're trying to minimize shopping trips AND save money)
  • Leftovers
  • Tiny Tacos plus fruit/veggies
  • Salad People
  • PB&J plus fruit/veggies
  • Cheese and crackers plus fruit/veggies
  • Grilled cheese plus fruit/veggies
  • Quesadillas plus fruit/veggies
  • Surprise Lunch! (usually hard-boiled eggs, cheese slices, miscellaneous fruit/veggies, crackers, etc.--basically, whatever's in the cupboard)
