Tomato Salad

Easy, delicious, and so pretty. If only I'd had my camera with me! If you have a garden, this is practically free.

~From Joy of Cooking, 1997 edition

  • 6 slicing tomatoes, mixed red and yellow if you can find them
  • 1/2 c. or so olive oil
  • balsamic vinegar
  • 1/4 c. chopped/snipped basil (or parsley)
  • salt and pepper to taste
Lay tomatoes on a chilled plate in a circle, alternating colors if you can. Drizzle olive oil on top. Drizzle balsamic vinegar over. Sprinkle basil on top. Sprinkle with salt and pepper to taste. Serve immediately.

~Serves 6 or so

Add mozzarella and I'm there!

You know, I'd normally think that, too--but this was delicious by itself.
