I bet the flours are the same or very similar--the white whole wheat of King Arthur's is supposedly from a lighter tasting wheat than what is typically used for "whole wheat flour." My friends who grind their own wheat make similar tasting bread to what the white whole wheat makes. We dream of grinding our own wheat! Do you think this is the same as "white whole wheat flour?" It is definitely lighter than the regular hard red wheat (which is why I use it) but it is still whole wheat and different than white flour.
