- lemon pepper seasoning
- boneless pork loin roast (3 pounds or up)
Put lemon pepper seasoning ALL over the roast--pat it in, making sure roast is thoroughly covered. Put in a roasting pan and cover.
Preheat the oven to 500 degrees. Place meat in and roast for 5 minutes per pound of meat. Do not open the oven door! Just turn the oven off and leave meat in for at least 2 hours. (Trust me on this!)
Figure on 1/3 pound of meat or so per person; leftovers make terrific sandwiches
mmm! sounds great! I am going to try this the next time I get a pork roast! :)
ReplyDeleteI definitely need to make this
ReplyDeleteBUT
you want me to turn OFF the oven?
yes?
This isn't a typo?
Thanks!
Yep--turn OFF the oven! Believe it or not! I've eaten this a million times at my in-laws and made it quite a few myself... trust me on this! You're heating the oven so hot in the beginning, especially if it's a larger roast, that it works out. Perfect for Sunday morning :).
ReplyDeleteFor those left-brainers out there it took me a little less than a half a cup of seasoning to get a good solid crust on my 4.45 pound of pork. I'm also cooking mine in a stoneware crock from PC and I'm going to add 10 minutes to the initial start time so that the crock is nice and fired up.
ReplyDeleteAnd the verdict is.....YUMM! I thought the pork was over spiced, but Philip thought it was perfect.
