Chocolate Eclair Dessert

This is a terrific dessert for summer since it's chilled and doesn't require any cooking! It makes a lot and is kid-friendly. Don't make it too far in advance because the graham crackers will get soggy (you have to let it chill, so make it early in the day for dinner that night).

  • 2 pkgs. French vanilla pudding mix (instant)
  • 3 c. milk
  • 16-oz. container whipped topping
  • graham crackers
  • 1 can/jar prepared chocolate topping
Combine pudding mix and milk. Fold whipped topping into pudding mixture. Line 9x13-inch pan with graham crackers. Layer half of pudding mixture on top. Repeat cracker and pudding layers. Top with graham crackers. Spread chocolate topping on top, making sure it touches edge of dish. Makes 1 large pan (or two small 8x8-inch pans). Supposedly it can be frozen, but I've not tried.
