Easy Kid-Friendly Fried Rice

This is super quick to throw together and especially welcome if/when you're fixing something a little more exotic for you and the hubby :-). It's very informal, too, so feel free to adapt at will. I like to make this on the side when I'm fixing the real deal complete with veggies like bok choy that the kids are a bit skeptical of.

  • ~2 c. leftover cooked rice*
  • 1/2-3/4 c. leftover cooked meat (that they like and/or recognize; I've even used leftover chicken nuggets to rave reviews)--cut into very small (pea-sized) pieces
  • 1 egg
  • 1/2 cup or so of veggie they like (frozen peas defrosted in a hot cup of water are easy!)
  • 1-2 T. oil
  • soy sauce and teriyaki sauce to taste
*Remember that the amount of rice will make almost double the amount of fried rice depending on additions, so a small amount for a couple of kids should work fine
  1. Heat a smallish skillet (6-8 inches) over medium high heat. Add 1 t. oil and swirl around (may need more if not using cast iron or nonstick). Whisk the egg and pour it in the skillet. Stir for a minute or so until cooked through and remove to a bowl with the already cooked meat.
  2. Pour 1 t. oil (or more, if needed) into skillet. Add rice and stir quickly to "declump." Add remaining ingredients along with 1 T. or so water and 1 T. or so desired sauce.
  3. Stir fry for a minute or two until heated through.
  4. Serve with additional sauce if desired.
Serves 2-4 preschoolers/young elementary aged kiddos!
