CSA and Garden Menu, week of August 14th

How did we get to mid-August so quickly?! I'll now be packing a kindergartner's large snack/small lunch 3x a week, too, so for my own sanity, I'm going to list some packable small lunch options. Since my daughter's a late sleeper and she has a 30 minute ride to school, I'm also listing some portable breakfast options.


I have been mighty lax in tending to the garden as of late, so my own garden's haul is weak:
  • cherry tomatoes
  • 2 yellow tomatoes
  • 1 red tomato
  • 1 poblano pepper
  • few banana peppers
  • basil (always basil!)

CSA Haul:
  • 3 nice sized tomatoes
  • bag of small cukes (maybe a pound?)
  • bag of small slicing onions (a pound?)
  • bag of red new potatoes (a pound?)
  • medium-sized head red cabbage
  • 2 hot peppers (cayenne and jalapeno)
  • 2 bell peppers
  • bag mixed summer squash
  • leftover from last week: salad stuff

Menu:
  • Monday (Meat 'n' 3 Day): Roast chicken, potatoes, mystery squash (from our front yard volunteer), salad
  • Tuesday (Tortilla Day): Quesadillas with leftover chicken and sauteed onions and peppers
  • Wednesday (Breakfast Day): Potato and egg scramble; muffins
  • Thursday (Pasta Day): Pasta with pesto, chicken, yellow squash
  • Friday (Bean Day): Black bean and rice salad
  • Saturday (Asian/Indian Day): Chicken curry, green beans
  • Sunday (Soup/Salad/Sandwich Day): Tomato soup and grilled cheese (I'll make the tomato soup earlier in the week and freeze it)

Lunches:
  • peanut butter crackers with fruit and cheese
  • lunchmeat sandwich with fruit and/or veggies
  • pb&j with yogurt and fruit
  • leftovers (hubby takes these most days)

Portable Breakfasts:
  • Smoothies plus muffin
  • Muffin plus cheese stick
  • Breakfast trail mix plus yogurt or cheese stick (this is basically dry cereal with nuts and raisins)
