CSA/Garden/Menu for August 6th

Looks like a yummy week ahead for us! If I wasn't frantically trying to finish my final paper for my summer class (it's due in a matter of hours), I'd take some pictures of the lovely fruits and veggies gracing our kitchen windowsill, counters, and refrigerator!

From our CSA Share
  • bag of zucchini and yellow squash (about 5 good sized veggies)
  • 5 gorgeous tomatoes (a few were freebies)
  • bag of green beans (maybe a pound?)
  • bag of new potatoes (a pound)
  • bag of small slicing onions (a pound)
  • 2 bell peppers (one is a very cool purple color)
  • 2 small hot peppers
  • gorgeous head of lettuce
 From the Garden
  • more tomatoes!
  • more banana peppers (have a huge bag of these in the freezer already)
  • more basil (have a bunch of pesto in the freezer already)
  • bell peppers and poblano peppers will be ready in a few days
From the Farmer's Market (when we picked up our CSA share)
  • 6 ears corn
  • 1/2 peck Jon-a-Mac apples!!!! First eating apples in our local season!!!! (we've had tart, cooking apples around for a few weeks)
Leftover from previous CSA shares (believe it or not!)
  • 1 bag slicing onions
  • 1/2 small head cabbage
Menu for the week (thinking as I type--this is partly why I'm taking the time to even write up this list... it's going to be a busy week and I need to have a potential plan)

  • Quesadillas with bell peppers, onions, jalapeno, sliced chicken, and homemade salsa
  • Roasted tomato soup (with jalapeno or chipotles); grilled cheese and/or salad
  • Chicken sausages with sauteed onions and cabbage, corn on the cob, salad
  • Chicken kabobs with onions, squash, and zucchini (and maybe a bell pepper), rice
  • Meat entree (TBD) with green beans and potatoes
  • Lentils and rice (or beans and rice) with salad
  • Stir fry with whatever's left at the end of the week!
