CSA and Menu Week of October 9

Last week, I dutifully made a menu plan... without putting much thought into it. As a result, not only did we not eat anything I planned to eat; we also didn't eat up much of our CSA produce! (sigh) So this week, we have a new batch of CSA veggies plus several things from last week (cabbage, potatoes, summer squash, etc.).

CSA
  • cabbage
  • 1 pound potatoes
  • several small bell peppers
  • several hot peppers
  • 1 bag brussels sprouts greens (new to us!)
  • 1 small bag mystery greens (can't remember what they are)
  • 1 pint or so yellow cherry tomatoes
  • 3 beautiful yellow slicing tomatoes
  • small bag of fresh basil
Garden
  • banana peppers
  • occasional bell peppers (finally!)
  • yellow tomatoes (must be the season for the yellows)
  • few small tomatillos
  • several small pumpkin volunteers

Menu: (not sticking with my pattern here...)
  • Sunday: leftovers for lunch; pasta with pesto and summer squash (maybe some chicken thrown in) with veggies and dip on the side
  • Monday: Rosemary Potato Frittata, muffins, fruit and fresh veggies on side
  • Tuesday: not sure yet--something with cabbage!
  • Wednesday: Laura's Unbelievable Chicken and Pasta (this is new to us) with a side of cooked greens
  • Thursday: Confetti-Stuffed Burritos
Friday-Saturday: out of town
