- 2 (10-oz) packages fresh spinach
- 1/4 c. water
- 1/2 c. freshly grated Parmesan cheese
- 1/4 c. whipping cream
- 2 1/2 T. butter, melted
- 2 1/2 T. finely chopped onion
- 1/8 t. pepper
- 1/2 c. fresh whole wheat breadcrumbs (homemade)*
- Remove stems from spinach; rinse leaves. Combine spinach and water in a Dutch oven; cover and cook over medium heat 8 minutes or until tender. Drain well in a colander, pressing with paper towels to remove excess moisture.
- Combine spinach, Parmesan cheese, and next 4 ingredients; spoon into a lightly greased 1-quart baking dish. Top with breadcrumbs. Bake, uncovered, at 450 degrees for 10 minutes or until thoroughly heated.
