Sweet Potato Fries

We love us some sweet potato fries around here. For a long time, I bought them ready-made (in the frozen section of the grocery store) and just popped them in the oven for a reliable, easy, nutritious side dish.

But then I got a heavy duty food processor and decided to try to make my own. And I discovered the amazingly simple, butter-free, recipe of Paula Deen's. Here it is--we chunk up our potatoes now and just roast them with the same seasoning mix.

5 sweet potatoes, give or take
olive oil
2 t. salt
1/2 t. pepper
1/2 t. garlic powder
1/2 t. paprika

Peel and cut sweet potatoes into desired size/shape. Mix seasonings (except oil) together.

Toss with oil generously and then toss with the seasonings. Spread potatoes evenly across a jelly roll pan, roasting sheet, or in two 13x9-inch pans; make sure they aren't too crowded.

Bake/roast at 450 degrees, turning every so often and flipping so that all sides are getting browned/cooked. They will take about 20 minutes. Cool 5-10 minutes before allowing people to gorge :).

Serves 3-5 (or more--especially if you're roasting them as a side dish)
