Carrie's Orange-Raspberry Jell-O Salad

Necessity is the mother of invention, and sisters are the mothers of great recipe saving ideas! This Jell-O salad is Carrie's answer to my desire to make the usual Raspberry Jell-O Salad when I had run out of applesauce. This is GREAT. The orange juice packs the sweetness the applesauce does, but cuts it even better with that citrus tang. Enjoy.

2 small boxes or 1 big box raspberry Jell-O (6-oz. total)
2 1/2 c. water, separated (see below)
1/3 c. frozen orange juice concentrate, still frozen
~20-oz. frozen raspberries, partially thawed

Pour 2 cups boiling water over the Jell-O powder (an 8x8-inch pan works nicely). Dissolve completely. Stir in frozen orange juice concentrate, swirling it around until melted. Stir in 1/2 cup cold water. Stir in raspberries. Refrigerate immediately and chill until set (it doesn't take as long as normal Jell-O since the berries and orange juice are so cold).

Serves 10-12
