Apple Walnut Chicken Salad

Another light lunch-time option from the South Beach Diet.

5 ounces cooked chicken breast, cut into 1/2"-3/4" cubes
1/2 c. chopped celery
3/4 c. chopped apple
2 ounces chopped walnuts
1 T. raisins
1/3 c. prepared Italian dressing
Bibb lettuce

Mix chicken through raisins together. Toss gently with dressing and serve over lettuce.

Serves 2
