This is a fun treat for kids--and easy to do on these mornings when kids are off of school or any morning when you have time to fry an egg.
~based on
Joy of Cooking, 1997 edition
- 1 slice bread per serving
- 1 egg per serving
- butter
In whatever skillet you usually fry eggs, put a pat of butter. Turn stove to whatever setting you usually use for frying eggs. Cut a circle out of the middle of each piece of bread using a glass or 2 1/2-inch biscuit cutter. Place bread slices in buttered skillet for about 30 seconds. Crack an egg in each hole. Let cook for 2-3 minutes, or until set enough to flip. Flip bread/egg in skillet, adding more butter if necessary. Cook until eggs are done to your liking. (I did two slices at a time--you need to leave enough room to be able to flip them easily, so don't crowd the slices in.)
Toast remaining circles and spread honey or jam on them.
