Grandmother's Cream Cheese Souffle

Anything with cream cheese as a primary ingredient is a winner in my book. This is another of our grandmother's recipes. Enjoy. (According to my grandmother's notes, this can be used as a dessert or as a dinner dish. If used as a dessert, sliced strawberries or raspberries (sweetened) can be used to top the souffle. Top with sweetened whipped cream. I would add that it seems a perfect brunch dish.)

  • 6-oz. cream cheese
  • 3/4 c. thick sour cream
  • 2 T. honey
  • 3 egg yolks
  • 4 egg whites
  • pinch of salt
Beat egg whites until soft peaks form. Soften cream cheese. Add sour cream and beat until smooth. Stir in honey, salt, yolks, and beaten egg whites. Turn into a buttered baking dish (about 1.5 quarts). Bake at 350 degrees for 35 minutes. Serve immediately.
