Mint Brownies


This is my friend Michele's recipe and, thanks to her and/or her kids, they make a frequent and much welcome appearance at our church potlucks. They are YUMMY. (They're also EASY and make ahead.)

  • 1 box brownie mix of your choice
  • 2 c. powdered sugar
  • 1/2 c. softened butter plus 6 T. butter
  • 3 T. creme de menthe flavoring
  • 1 c. chocolate chips
Make brownies according to box directions. Let cool completely. (Make in a 13x9-inch pan.)

Beat powdered sugar, softened butter, and flavoring together (beat well). Ice brownies and chill in refrigerator.

Melt chocolate chips and 6 T. butter together. Cool and pour over iced brownies. Chill.

Serve! (These brownies will "melt" if you put them on a buffet line at a cookout outdoors....)
