Sloppy Joes "Lite"

Only America's Test Kitchen could pull this off... and it is GOOD. I served this up to a crew of confirmed mushroom-haters without revealing the secret ingredient. And no one noticed :-). (evil maniacal laughter here)

~From America's Test Kitchen Healthy Family Cookbook

  • 2 t. oil
  • 6 oz. mushrooms*
  • 1 small onion, chopped
  • 1 garlic clove, minced (or slightly more...)
  • 1 t. chili powder
  • 12-oz. ground turkey (not turkey breast)
  • 8-oz. tomato sauce
  • 1/4 c. water
  • 1/4 c. ketchup
  • 1 T. Worcestershire sauce
  • 1 t. brown sugar
  • 1 t. cider vinegar
  • salt and pepper as needed
  • 4 whole wheat hamburger buns
*chop the mushrooms up in a food processor so they're in tiny little pieces--about the same size as ground turkey crumbles...

  1. Heat oil in large skillet over medium heat. When shimmering, add mushrooms and onions. Saute for about 6 minutes, or until soft.
  2. Add garlic and chili powder. Cook for 30 seconds, until fragrant.
  3. Add turkey and cook, breaking up with a wooden spoon, until no pink remains.
  4. Add remaining ingredients (except buns!) and simmer for about 5 minutes, until slightly thickened.
  5. Serve over toasted buns.
