Fruit Syrup for Pancakes

We eat this with Cottage Cheese Pancakes.

From More With Less.

Combine in saucepan:
1/2-3/4 cup sugar (only needs 1/2 cup in my opinion)
3 tablespoons cornstarch

2 cups water
Bring to boil, stirring constantly.

2 cups sliced fresh peaches (or any combination of fruit--we used frozen berries)
Simmer until fruit is tender.

Remove from heat and add:
2 tablespoons lemon juice

Serve hot with pancakes.
