Mom's No Peek Casserole

Needless to say, given the title, but this is our mom's recipe. This is a dish Carrie and I grew up eating, and it's much enjoyed by anyone I've served it to as well. I'm betting that it could easily be converted to a crock pot recipe--if anyone tries that, let me know!

Side Dish Serving Suggestion(s): buttered noodles and steamed broccoli

  • 2 pounds boneless stew meat (remove excess fat); can cut up a chuck roast as well
  • 1 can mushrooms
  • 1 can cream of mushroom soup
  • 1 package onion soup mix
  • 1/2 c. red wine
  1. Marinate meat in wine for 30 minutes.
  2. Mix all ingredients together in a 2 1/2 quart casserole.
  3. Cover casserole tightly.
  4. Bake for 3 hours at 350 degrees.
  5. Serve over rice or noodles.
Makes 6 servings or so
