~based on Joy of Cooking, 1997 edition
- sweet potatoes
- butter
- salt
- chosen embellishments (apple/pineapple/orange/tangerine/lemon juice, brown sugar, crystallized ginger, nuts, ground cinnamon, etc.)
- Scrub sweet potatoes and put in pot big enough to hold them as well as water to cover by 1-inch. Add salt (maybe a teaspoon per large pot?). Bring to a boil over high heat; cover and continue to boil (you'll need to reduce the heat) until potatoes are tender.
- Drain water and let potatoes cool until you can handle them.
- Peel skin off with your fingers (it should come right off). Mash with potato masher, add a couple of tablespoons of butter and your chosen embellishments, and stir.
