CSA + Garden Haul Week 9 (7/19/12)

Our own garden isn't producing much more than abundant cherry tomatoes, but the Colvin Family Farm seems to be doing quite well! We didn't get eggplant this week (whew! dodged that bullet so far ☺) but I think it may be on the horizon.

CSA:
  • 1 special melon (forget it's name! It's the yellow one)
  • 1 cantaloupe
  • 1 Cherokee heirloom tomato
  • 2 Lemon Boy tomatoes
  • 2 red slicing tomatoes
  • 2 small purple peppers
  • 1 bag slicing onions 
  • 1.5# potatoes
  • 2 yellow squash + 1 round yellow squash
  • 1 bag kale
Garden:
  • CHERRY TOMATOES
  •  nothing much else save some basil and other herbs
Leftovers: (kids and hubby gone for several nights--haven't cooked much!)
  • Potatoes from last week
  • Kale from last week 
  • couple of tomatoes from last week
  • tomatilloes from last week
  • 1 pattypan squash (still!)
  • jalapenos from friends' garden
  • grocery store cilantro
  • grocery store green onions
  • grocery store lettuce
  • grocery store bell peppers
Possibilities:
  • BLT's (the sole reason for that grocery store lettuce ☺)
  • Kale chips
  • Country Squash Bake (youtube video of Val Colvin making it)
  • Something Mexican involving tomatillo salsa
  • that's as far as I've gotten... I'm kind of brain dead right now

When you DO get eggplant, see if you can find a copy of America's Test Kitchen and make eggplant parmesan--theirs is amazing!! If you have an abundance, you can do all the breading at once and pop what you don't need in the freezer. My family loved it. I may have to go out and buy some eggplant! (Let me know if you need the recipe.)
