Recipe from my friend Betsy
- 1 1/2 pounds sweet potatoes, peeled and quartered
- 2 T. Italian dressing
- 1/2 c. finely chopped onion
- 1/2 c. sour cream
- 1 T. brown sugar
- Cook potatoes in water until tender (~10 minutes). Remove and drain.
- Heat dressing in small skillet and cook onions 5 minutes.
- Mash sweet potatoes, onion mixture, sour cream and brown sugar all together.
- Garnish with cinnamon.
