Sweet and Sour Mashed Sweet Potatoes

This is a nice change from the usual sweet potato dishes. The texture is more similar to mashed potatoes because of the added sour cream.

Recipe from my friend Betsy

  • 1 1/2 pounds sweet potatoes, peeled and quartered
  • 2 T. Italian dressing
  • 1/2 c. finely chopped onion
  • 1/2 c. sour cream
  • 1 T. brown sugar

  1. Cook potatoes in water until tender (~10 minutes). Remove and drain.
  2. Heat dressing in small skillet and cook onions 5 minutes.
  3. Mash sweet potatoes, onion mixture, sour cream and brown sugar all together.
  4. Garnish with cinnamon.

Serves 4? (didn't write down the servings...)

I so heart your recipes:) Just stopping by to thank you for the comment- I've tried that, but as the crazy eccentric one on BOTH sides of my family (or so they think, I'm actually pretty normal, I think:) they just ignore me. When I started using cloth diapers I practically BEGGED every family member to buy the baby mostly diapers as gifts- we didn't get a one. I guess they don't think cloth is as exciting as I do. And in all fairness, it's mostly my mother in law, but I was trying not to single her out on my blog. My mom listens to me usually and mostly buys the kids things from Haba, or clothes, or something she knows I'm okay with. Anyway, thanks for reading!
