This makes regular appearances at my in-laws' table. My sister-in-law Rebekah has made it the last two times I've eaten it, and it's delicious (especially with ice cream)! Pound cakes are not difficult, and the ingredients are so ordinary--so you can make this a lot. Grammie is my husband's grandmother.
- 1 1/2 c. butter
- 3 c. sugar
- 5 large eggs
- 1 t. vanilla
- 3 c. flour
- 1/2 c. cocoa
- 1 t. baking powder
- 1 t. salt
- 1 c. milk
- Beat butter and sugar until light and fluffy. Add eggs and vanilla and beat slowly, increasing speed until well mixed.
- Mix flour, cocoa, baking powder, and salt together and add to first mixture alternately with milk, starting and ending with flour.
- Bake in a 10-inch tube pan in a 325-degree oven for 1 1/2 hours.
