Simple Mashed Sweet Potatoes

These are a nice alternative to your usual baked sweet potatoes. You can embellish them with whatever "feel" you're going for (sweet, savory, in between). We discovered that a few tablespoons of pineapple juice for 2 large potatoes was delicious! That's all I added other than a little butter.

  • sweet potatoes
  • butter
  • salt
  • chosen embellishments (apple/pineapple/orange/tangerine/lemon juice, brown sugar, crystallized ginger, nuts, ground cinnamon, etc.)
  1. Scrub sweet potatoes and put in pot big enough to hold them as well as water to cover by 1-inch. Add salt (maybe a teaspoon per large pot?). Bring to a boil over high heat; cover and continue to boil (you'll need to reduce the heat) until potatoes are tender. 
  2. Drain water and let potatoes cool until you can handle them.
  3. Peel skin off with your fingers (it should come right off). Mash with potato masher, add a couple of tablespoons of butter and your chosen embellishments, and stir.
