From South Beach Diet
1/2 c. old-fashioned oatmeal
1/3 c. low-fat cottage cheese
4 egg whites (I use 2 whole eggs)
1 t. vanilla
1/4 t. cinnamon
1/4 t. nutmeg
Process everything in a blender until smooth. Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned.
I eat mine with honey on top!
