Weekly Menu (1/10-1/16)

Always easier to describe my menu in retrospect. Planning these days gets me nowhere, except to the land of wasted food and hoped-for-shopping-trips-that-didn't-happen. So, here's what we ate this past week. (I now menu plan the night before with what's on hand, per Tightwad Gazette recommendation and the help of my trusty cookbooks, and it's working well.) Lunches aren't mentioned because they're generally leftovers, pb and honey or jelly with apples on the side, grilled cheese with apples on the side, or something mighty similar.

Sunday:
Breakfast: oatmeal with the fixin's
Lunch: leftovers

Monday:
Breakfast: Scrambled eggs/toast/citrus
Dinner: Fajitas (with stuff from the freezer), salad, pinto beans (also from the freezer)

Tuesday:
Breakfast: Applesauce muffins, hard-boiled eggs, citrus
Dinner: Falafel with Tzatziki Sauce, crudite

Wednesday:
Breakfast: Fried Egg Sandwiches, citrus
Dinner: Broiled Fish with Pesto, Green Beans, Rice Pilaf, Butternut Squash Souffle (all from freezer/previous summer's garden!)

Thursday:
Breakfast: cold cereal with milk; citrus
Dinner: Chicken with Wine Sauce (VERY easy and uses some of the bottle of wine we opened last night!), leftover rice pilaf, leftover squash souffle, steamed broccoli

Friday:
Breakfast: toast, yogurt and bananas and honey
Dinner: quesadillas (using leftover tortillas, cheese, salsa from Monday; using canned beans and frozen peppers); Mexican slaw

Saturday:
Breakfast: cold cereal with milk
Sunday:
Breakfast: hard-boiled eggs, bananas, toast
Dinner: Leftover dumplings-turned-int0-potstickers, leftover rice
