Yeasted Waffles

These are typically called "overnight waffles," but I usually make them in the morning for a breakfast-for-dinner night... hence my title change! This makes a terrific family-friendly dinner; I offer some link sausage and fruit to round out the meal.

  • 2 1/4 c. flour (can use half white whole wheat)
  • 2 T. sugar
  • 1 package active dry yeast (or, roughly 2 1/2 t. instant yeast)
  • 1/2 t. salt
  • 1/4 t. cinnamon
  • 1 3/4 c. milk
  • 2 eggs
  • 1/3 c. oil
  1. Combine dry ingredients, whisking to mix. Combine wet ingredients, whisking to mix. Add wet ingredients to dry, beating until combined (or whisking vigorously...). Cover loosely and refrigerate overnight or all day.
  2. Stir batter. Pour appropriate amount into your waffle iron and cook per manufacturer's directions.
Makes 12-14 (4-inch) waffles
