Spinach Parmesan

What makes any type of greens better? The addition of lots of butter, cheese, and whipping cream! Mmmmmm....

  • 2 (10-oz) packages fresh spinach
  • 1/4 c. water
  • 1/2 c. freshly grated Parmesan cheese
  • 1/4 c. whipping cream
  • 2 1/2 T. butter, melted
  • 2 1/2 T. finely chopped onion
  • 1/8 t. pepper
  • 1/2 c. fresh whole wheat breadcrumbs (homemade)*
*the next time you make some bread (if you ever do), save the heels or last slice or two for fresh bread crumbs; you can freeze the bread and make the crumbs later, or whirl the fresh bread in the food processor and freeze the crumbs.
  1. Remove stems from spinach; rinse leaves. Combine spinach and water in a Dutch oven; cover and cook over medium heat 8 minutes or until tender. Drain well in a colander, pressing with paper towels to remove excess moisture.
  2. Combine spinach, Parmesan cheese, and next 4 ingredients; spoon into a lightly greased 1-quart baking dish. Top with breadcrumbs. Bake, uncovered, at 450 degrees for 10 minutes or until thoroughly heated.
Makes 4 servings
