Recipe from Take-Out Tonight!
- 3 ripe tomatoes, cut into 6 wedges each
- 2 green bell peppers, seeded and cut into rings
- 1 cucumber, peeled and cut into 1/4-inch-thick slices
- 4 pepperoncini
- 1/2 c. sliced red onion
- 6 kalamata olives, pitted and halved
- 2 T. red-wine vinegar
- 1 T. olive oil
- 1 t. dried oregano
- 1/8 t. salt
- 1/8 t. pepper
- 2 ounces feta, crumbled (about 1/2 c.)
- 2 pita breads, toasted and cut in half crosswise
- Combine all but feta and pita. Sprinkle with feta and serve with pita.
