Tomato-Basil-Brie Pasta

This dish is decadent--an absolutely perfect summer meal. We were served this blissful concoction on a back porch, and that seems an ideal setting. My friend Elizabeth sent me the recipe; she calls it "Bonnie's Pasta."


Mix: 4 tomatoes, chopped
1 lb. brie (if using the kind with the rind, trim off the rind)
1 c. olive oil
1 c. sliced basil, packed (this is fresh basil...)
3 garlic cloves, chopped
1 1/2 teaspoon salt (try a little less...)
1/2 teaspoon pepper

Let sit at room temperature, 2 hours
Cook 1 lb. linguine, put on top--will melt cheese.

Serves 4-6

sounds so amazing but oh my, 1 c of olive oil and a lb of cheese! i bet it tastes great. never combined brie with pasta, i would LOVE that.
