Greek Villagers' Salad

Another winning recipe from Weight Watchers.

Recipe from Take-Out Tonight!

  • 3 ripe tomatoes, cut into 6 wedges each
  • 2 green bell peppers, seeded and cut into rings
  • 1 cucumber, peeled and cut into 1/4-inch-thick slices
  • 4 pepperoncini
  • 1/2 c. sliced red onion
  • 6 kalamata olives, pitted and halved
  • 2 T. red-wine vinegar
  • 1 T. olive oil
  • 1 t. dried oregano
  • 1/8 t. salt
  • 1/8 t. pepper
  • 2 ounces feta, crumbled (about 1/2 c.)
  • 2 pita breads, toasted and cut in half crosswise
  1. Combine all but feta and pita. Sprinkle with feta and serve with pita.
Serves 4
