Dilled Cucumber Salad

Another cucumber salad to make ahead! This is a delightful, refreshing salad and is creamy rather than simply marinated.

From The Ultimate Southern Living Cookbook

2 large cucumbers, unpeeled and thinly sliced
1/3 cup thinly sliced onion
1 T. fresh dill or 1 t. dried dillweed
1 T. white vinegar
1/2 t. salt
1/8 t. ground white pepper (I used black)
1/8 t. sugar
3/4 c. sour cream (or plain yogurt)
lettuce leaves

Pat cucumber slices between paper towels. Combine cucumber, onion, and next 5 ingredients in a bowl; toss gently. Fold in sour cream; cover and chill up to 3 hours. Serve on lettuce leaves.

Makes 6 servings.
