Spinach Maria for a Crowd

We had this on Christmas Day and it was a big hit! This is the way I made it; it should serve 10 people easily (or more). If you don't need as much, just reduce various ingredients as you see fit. It's also super easy to make even more of!

  • 3 (12-oz.) bags frozen, cut leaf spinach
  • 2 (8-oz.) blocks cream cheese
  • 1 large onion, finely chopped
  • butter--maybe 1/2 a stick? maybe more? can't remember
  • 1 1/2 c. shredded Parmesan
  • 1/2-1 1/2 t. cayenne pepper
  1. Thaw/cook spinach according to package directions and drain well.
  2. Cook onion in butter until soft. Add cream cheese and stir to melt.
  3. Add spinach and Parmesan to cream cheese/onion mixture along with cayenne pepper to taste. Spinach Maria is supposed to have a subtle kick; I started with 1/2 t. and upped it by just sprinkling some extra in.
  4. Stir and heat over medium heat until all is heated.
  5. You can put this in a greased casserole, top with bread crumbs, and warm as a casserole in a 350-degree oven for about 1/2 an hour OR serve it right from the stove OR refrigerate it and just reheat it later in the microwave.
