The kids and I were out of town last week, so when we got home on Sunday, we had a mountain of CSA produce to eat up...by this Thursday! A near impossible task, even though I took a meal to someone. Here's what we came up with:
Sunday: Lunch: pb&j, fruit; Dinner: Chicken and Waffles
Monday: (Meat + 3 Night) Leftover chicken, Microwave Squasherole, Mashed Turnips and Potatoes, Watermelon, Banana Cake (a feast!)
Tuesday: (Kid Night--kid helper's choice) Summer Squash, Sweet Pepper, and Polenta Casserole + watermelon for the grown-ups; fish sticks/fries/jello for the kids
Wednesday: Church dinner (pizza and ice cream)
Thursday: (Quick and Easy) The P3*, Salad, fruit
Friday: (Farmer's Market Special) Chard Enchiladas, Mexican Slaw
Saturday: Cookout! (for which we are merely bringing some chips)
+ made Elisabeth's Pasta Salad for tomorrow's potluck and a Red Cabbage Salad also for tomorrow's potluck
Lunches have been leftovers for grown-ups, pb&j or cheese/crackers plus fruit and veggies for kids
