Sourdough Coffee Cake

This is to die for. "Cake" is what should stand out in the title... not so much "coffee cake." After all, don't we call "coffee cake" just that because we need to have an excuse to eat cake for breakfast? This is delicious, easy, inexpensive. I make it for Sunday morning breakfast (make the streusel topping the night before; feed your starter the night before).

Recipe from Recipezaar

  • 1 c. active sourdough starter*
  • 1/3 c. vegetable oil
  • 1 egg (slightly beaten)
  • 3/4 c. sugar (can reduce to 1/2 cup, too)
  • 1 c. flour
  • 1/2 t. salt
  • 1 t. baking soda
  • 1 t. cinnamon
  1. Combine sourdough starter, oil, and egg.
  2. Stir together dry ingredients and add to starter mixture.
  3. Put dough into greased 8-inch or 9-inch square pan.
  4. Sprinkle topping (see below) on top of batter.
  5. Bake for 35 minutes at 350 degrees.
Topping
  • 1 t. cinnamon
  • 1/2 c. brown sugar
  • 2 T. butter
  • 1 T. flour
Mix all together using pastry blender.
